Peking Duck
++ To me it would’ve taste nicer if the skin is crispier, add on to a thinner pancake. Overall the Peking Duck was scrumptious!! ++
Chinese Peking Duck originated in the imperial kitchens of the Ming dynasty emperors over 600 years ago. With the fall of the Ching dynasty in the early 1900s, court chefs brought the Chinese Peking Duck dish to the surrounding areas in Beijing (formerly known as Peking) and eventually the popularity of Chinese Peking Duck spread across the globe.
Chinese-style Crispy Aromatic Duck is normally brought to the table in quarters/halves/whole and then shredded by restaurant staff in front of the customer.
Though Chinese Peking Duck can also be ordered by quarters/halves/whole, it is normally brought to the table already chopped into bite-sized chunks.
Refreshing cucumbers and spring onions sliced into thin matchstick-sized strips (julienne) accompany Chinese-style Crispy Aromatic Duck to balance out the rich hoisin or plum sauce, which is also supplied for dipping or spreading onto the pancake before adding the crispy duck and vegetables.
Avacado
The avocado's image first took on some polish with a 1996 study by researchers at the Instituto Mexicano del Seguro Social in Mexico (Archives of Medical Research, Winter 1996) that looked at the health benefits of daily avocado consumption. The 45 volunteers who ate avocados every day for a week experienced an average 17% drop in total blood cholesterol. Their cholesterol ratio also changed in a healthy way: Their levels of LDL (low-density lipoprotein, or "bad fat") and triglycerides, both associated with heart disease, went down. Their HDL (high-density lipoprotein, or "good fat") levels, which tend to lower the risk of heart disease, climbed.
Researchers have also discovered that avocados are rich in beta-sitosterol, a natural substance shown to significantly lower blood cholesterol levels. In a review article published in the December 1999 issue of the American Journal of Medicine, researchers pointed out that beta-sitosterol was shown to reduce cholesterol in 16 human studies.
How to Make Fried Ice Cream

The real secret to this is making sure that the ice cream is 'deep frozen' to keep it from melting while it's being fried. It doesn't travel well, so this is an 'at home' dessert and can be problematic if you're serving a lot of people and don't have a lot of help.
How to make fried ice-cream:
1) Deep Freeze 1 Quart of your favorite flavor of ice cream (you can scoop out the ice cream and place on a metal baking sheet in the freezer to help the process along).
2) Crush your favorite 'topping' (about 3 cups) - this can be done with 'nilla wafers (vanilla or chocolate), non-filled cookies, graham cracker crumbs seasoned with cinnamon, your favorite sweetened cereal (pulverized in your blender).
3) Beat 3 egg whites REALLY WELL
4) Roll the 'ice cream balls' in the egg whites, coating well and then roll in the crumbs until covered completely
5) Refreeze the coated ice cream balls for approximately 3 hours
6) Heat 2 quarts of oil in deep fryer or heavy deep pot til temperature is 375 degrees (about 190 celcius).
7) Fry one or two at a time for only 10-15 seconds and serve immediately.
(This recipe will make 8 desserts)
